Welcome on arrival
Visit a local deer park
Learn to understand the difference between the species in meat terms & how the animals change throughout the year
See how deer are humanely culled and field dressed
Return to the school, learn to skin, joint and butcher a whole carcass with a previously hung animal
Learn to finely butcher the carcass down to individual cuts
Make sausages from the off-cuts & learn the principles of brining prior to smoking & marinading the meat

Preparation of one dish for lunch
Throughout the day you will prepare 5 recipes to include pheasant, rabbit & wild venison
